There are no fancy lids or housings or spits here, this is a big old roasting tray (13 inches by 9 inches, thanks for asking) and a non-stick rack over it.
The non-stick rack is where you put the meat. This lets the juices run out and into the tray below.
Sometimes, you’re going to save the meat juices and add them to the gravy because it adds a certain oomph.
Don’t Forget The Roast Potatoes and Vegetables
Sometimes, however, you’re going to line that roast pan with potatoes as far as the eye can see and you’re going to let the meat juices act as an additional layer of basting fat to give them the crispest and most tasty outsides possible.
And yes, you can throw this in the dishwasher to get it clean. Though, it will probably last longer if you hand wash it.
